Vegan No-Cook Strawberry Bars

Easy to make and oh-so fruity, these no-bake bars are great snacks for kids and adults. Make them in batches to easily grab when you’re on the go.


1 tsp vanilla extract

250g strawberries, hulled

1 cup shredded coconut

1 tsp ground cinnamon

1 1/2 cup rolled oats

1/4 cup white chia seeds

1/2 cup dried apricots


Step 1

Lightly spray a ½ cup Souper Cube tray with Oil of your choice

Step 2

Place strawberries, vanilla, cinnamon and apricots in a blender and pulse until smooth.

Step 3

Transfer mixture to a large bowl and add oats, 3/4 cup coconut and chia seeds, then stir to combine.

Step 4

Pour mixture into tray and press down firmly using back of a spoon. Press in remaining coconut.

Step 5

Freeze for 1 hour or until firm. Store in fridge until ready to serve.
